Spiced Chicken with Brown Butter

Where do I start with this post? I don't even know..it was so amazing. I mean incredibly amazing. I literally took a bite and said "Oh my gosh, that's the best piece of chicken I've ever had in my life!" My husband responded with "really?", I said "yes, try it now." It may not look amazing but I can't even describe in words how good this was. Five star restaurant good. Who needs to go out to eat when my husband and I are in the kitchen? He was just asking me if I ever say that he's cooked certain meals. Sometimes I just get crazy and start blogging and don't give him enough credit. He said my blog name should be things my husband cooks for me. Hey! I cook too! We share. Which is awesome, not every married couple has that. We can't cook together too much though. We're very territorial when it comes to cooking. Don't stir that, I just stirred it! Did you add enough salt yet? Leave me alone! Go sit down, that's why it's easiest to just leave it to one person. :) Although sometimes it's nice to have a little help and then be done, that's when it works. Now I've gotten off track! Anyways, I'll give my husband credit for this dish, because he did make it. I won't give him credit for the pictures or for the amazing blog posts. And I can't wait to have it again. Ugh, I wish I had some now. Even better, it was pretty easy to make, how do I know this if I didn't make it? Duh, I watched and read the recipe! Anyhoo, I'll get to the recipe finally! Go make this now, or put it on your menu for next week because you will fall in love with this! I promise, and if you don't, I'm sorry for your taste buds. Enjoy!!!

Spiced Chicken with Brown Butter

8 chicken thighs bone in skin on (very important)
Salt and pepper
4 teaspoons paprika
1/2 teaspoon cayenne pepper
2 teaspoons ground cumin
1 teaspoon ground coriander
5 cloves garlic, minced
1 stick butter at room temperature
*My husband only used 3 chicken thighs, we had a little brown butter left over but he kept scooping it over the chicken throughout the broiling process and before serving, we only need about 1lb of chicken to feed two people. It worked fine but if you want to use 8 feel free!  
Season chicken generously with salt and pepper and preheat your broiler.  In a small bowl, combine the spices, garlic, and butter. Beat the mixture until the spices are completely incorporated. Lay the chicken pieces skin-side up in a broiler-proof dish which will collect the spicy brown butter as it melts. Rub the spiced butter all over the chicken skin so all the pieces are thoroughly covered. Cook the chicken about 5 inches from the broiler until the skin is crisp and slightly blackened, 7-10 minutes, (hubby definitely cooked them longer than 10 minutes) then flip and cook the other side for 5 minutes more until the chicken is cooked through. Throughout the cooking, spoon the brown butter in the bottom of the dish over the pieces to baste them. just make sure you cook them until the chicken is cooked through, and yes, you'll say that is burnt, like I did several times. Don't worry it's supposed to be that way and it tastes good that way. Just look at my pictures!  Flip the chicken pieces back over and cook for a minute longer to crisp the skin. Serve with rice and the extra brown butter spooned over everything. We didn't serve with rice, we served it with Lemon Spiced Potatoes and a fresh salad.

LOL - tell him I said "Good Job"! My husband and I are the same. I always joke him that it is easier to share a bathroom and closet with him than it is to share MY kitchen :)
