Chocolate Chip Scones

I was feeling some yummy breakfast the other weekend and decided to make these scones..they looked yummy and I love chocolate chip scones. My husband loved them too, I was some what surprised. He was like isn't this just cake? I said No!! It's a scone, he kept saying this is chocolate chip cake for breakfast..whatever! :) Needless to say it was yummy and only took us a few days to finish it off. It was also really easy to make!

Chocolate Chip Scones
3/4 cup cold buttermilk
1/4 cup sugar
2 tsp vanilla extract
1 large egg
1 cup all purpose flour
1 cup white whole wheat flour
1 tbsp baking powder
1/2 tsp salt
3 tbsp chilled butter (must be cold) cut into small pieces
3/4 cup chocolate chips
cooking spray
1 large egg white, lightly beaten
1 1/2 tbsp sugar

Preheat oven to 375 degrees. Line baking sheet with parchment and spray. Combine buttermilk, sugar, vanilla and eggs in a bowl and mix, set aside. Combine flour, baking powder, and salt..cut in the chilled butter with a pastry cutter if you have it, if not just mix it in as best as you can until it resembles coarse meal, fold in chocolate chips. Add in buttermilk mixture until just combined. Knead dough on a lightly floured work surface. Form dough into a 9 inch circle and place on baking sheet. Cut the dough into 12 wedges, be sure to cut dough all the way through. Brush with egg white and sprinkle with sugar. Bake for 18-20 minutes. Enjoy warm!

Yum! I only ever bother to make breakfast on the weekends when hubby is home in the morning. Looks like I'll have to give these a try on Saturday. :)
