Crash Hot Potatoes

These just might be the best potatoes I've ever had. They're Ah-mazing! I can't wait to have them again. Hubby made them so I have to give him credit :) anyone who likes potatoes needs to make these. I am looking forward to having them again next week, they were that good. I'll let you decide for yourself once you make them. Please enjoy! I originally found this recipe from The Pioneer Woman, but it seems like they are popping up all over the place lately so I'm sure many of you have already seen them, and hopefully made them.

Crash Hot Potatoes
12 whole New Potatoes (or Other Small Round Potatoes)
3 Tablespoons Olive Oil
Kosher Salt To Taste
Black Pepper To Taste
Rosemary (or Other Herbs Of Choice) To Taste


Preheat oven to 450 degrees. Boil potatoes in salted water until fork tender. Generously drizzle sheet pan with oil, place fork tender potatoes on pan leaving enough room between each potato. By enough room I mean make sure there is enough room to smash em all down! With a potato masher, press down each potato until it's slighty smashed. You may have to repeat this step. Brush tops of taters with more oil and sprinkle with salt and pepper, and fresh rosemary..unfortunately I didn't have this on hand, but they were still amazing. Bake for 20-25 minutes or until golden and crispy. Enjoy!


 Okay, so they're not the prettiest, but they taste amazing!!!

What if you added some grated parmesan cheese at the end??? I am definitely going to try these. I think that some yukon golds would be a great potato for this.

I made these tonight and they are blissfully wonderful. My husband loved loved them. I added crushed garlic to them and they made the whole kitchen smell devine. Thank you so much for sharing this.

I so wish I had potatoes in my pantry right now! It's really early in the morning and I'm sitting here, envisioning them with a poached or fried egg on top of them. Maybe even a couple of strips of bacon! LOL Either way, they're a definite keeper and I'm pretty sure I'll be making a trip to the store later today. Popping over from Creative Mondays.
